Happy Thanksgiving

So glad to have a few days off from hitting the books. I was able to get the last of laundry done so I can RELAX for the next 4 days. I also did my favorite thing--baking. This year I made sugar cookies in the shape of pumpkins, and banana pumpkin bread. See recipe below. My husband has to work mandatory overtime tomorrow. Even though it sucks, I am thankful for the tripple $$$ he will get. I am also thankful for my active and cute kids, my darling husband, faithful and loyal friends, and all of my family including all the extends! Have a yummy and blessed Thanksgiving!

Banana Pumkin Bread

2 Ripe Bananas
2 eggs
1/4 cup vegetable oil
1 1/3 cups of canned pumpkin
1/2 cup of honey
1/2 cup white sugar
2 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon of salt
2 teaspoons of pumpkin pie spice OR I used 1 teaspoon all spice and 1 teaspoon vanilla
1 teaspoon cinnamon
3/4 cup raisins
1/2 cup of walnuts

  1. Preheat oven to 350
  2. In a large bowl mix ingredients according to the order listed.
  3. Bake at 350 for 45 minutes or until toothpick is clean!
  4. Enjoy! I like this because it does not have a strong pumpkin flavor, more banana and the kids love it!

Mandatory overtime on Thanksgiving? Is that for all the cox employees? Hope you and the famly have a great Thanksgiving!!!!

mama bear: no, not all employees, just tech support because they need to be available 24/7, even holidays. there's a skeleton crew so not all tech support has to work.
