Trying New Things

While nursing my family back to health this week, here are some new recipes I tried! Thanks to good eating, vitamins, and taking care of ourselves, we are all back to normal hooray!

FRESH GREEN PEA SOUP

10 oz. frozen peas OR 2 cups fresh
1 cup of boiling water
1/4 cup clean raw cashews or almonds
2 cups of water
1 teaspoon onion powder
1 teaspoon of salt
1-2 garlic cloves
1/4 teaspoon of basil
1/2 teaspoon of dill
(I omitted the last two ingredients and it was fine)

Boil the peas for 2-3 minutes. Then put peas and all ingredients in blender and blend.


MACARONI AND CHEESE
(no butter or cheese)


2 quarts of water
1 teaspoon of salt
2 cups of noodles
Boil first 3 ingredients.
1 cup of clean raw cashews (I used almonds)
2 cups of water
4 oz. jar of pimentos
2 Tablespoons of fresh lemon juice
2 teaspoons of salt
1 teaspoon onion powder
Blend all these ingredients together. Pour the sauce over the noodles in a casserole dish. Sprinkle with bread crumb and bake for 30-35 minutes at 350.

WHOLE GRAIN CREPES

1 1/2 cups of soy milk
1/2 cup of rolled oats
1/2 cup of whole wheat flour
1 -2 teaspoons of brown sugar
Blend all ingredients together. Add more soy milk to thicken or thin.

sounds interesting! and that mac and cheese sounds weird, but tell me how comes out, i'm curios to know!!

Actually it was yummy. Husband and Noah ate it and hubby said it was good. The pimentos make the sauce more of a pink color than yellow. I got all the recipes from Rodica (Mrs. Popovs good friend)
